The coasts have lots of great food because of the influx of immigrants over many decades. And the birth of California cuisine and its evolution in the 1970s-1990s. Much of the Midwest did not adopt this (except maybe little pockets of the major cities) and I can say the stereotype of Midwesterners making casseroles, eating heavy food, using canned vegetables and soups is not untrue.
