I generally agree with you that a business is free to change its hours. But, if a doctor (or anyone else with prescheduled appointments) booked Saturday hours, I think it would be unprofessional to simply cancel all existing appointments because he no longer wanted to work Saturdays. I would expect them to honor the appointments already made (barring some more specific and exigent conflict) and simply not schedule any future appointments on the weekend. OP might still be pissed because she picked this dentist based on weekend hours, but at that point I think the dentist is well within his right to change the schedule going forward and OP is free to find someone else if she prefers. I think this quite a far cry from indentured servitude.[/quote]
