It's about being somewhat educated about food. Well-done steak is drier and less flavorful. You are taking the steak right up to the edge of burning it. It destroys the flavor and the texture. If you are going to eat well done steak, you might as well get cheaper steak and cook it at home. You are not getting anything out of paying a chef to cook it for you. [/quote]
