I now use my Vitamix to chop cauliflower into rice, and it rocks. Stir fried with a bit of oil, garlic and onions with a bit of cheese on top. Yum! I also have a cheap spiralizer ($15 from Bed Bath & Beyond), and I love it. Great for zucchini and squash pasta. I stir fry it quickly with a bit of oil and spices, use it instead of pasta with whatever sauce we have handy, and I also mix it in with all sorts of other dishes. Just the other day, we I reheated some leftover Pad Thai takeout, and doubled the size of my meal by stirring in some warm (but still a bit crunchy) zoodles. It tasted great! [/quote]
