I'd suggest Zatar chicken.  This can be done indoors or on an outdoor grill.  Penzey's has the Zatar spice mix:

Serve on a bed of pearl cous cous which cooks up really quickly.

Sides
Tomato/Cucumber side salad with mint:  can also be done ahead (I'd use half the amount of onion and either keep in half circles so people can pick them out)
