We usually go over to Ixtapa island one day, but the snorkeling is not Carribean-type clear water.  There is coral and fish, but you can't expect the crystal blue of the Carribean.
We would see our kids during the day and ask if they wanted to leave their group and come down to the beach with us, or go sailing.  Sometimes they would, sometimes they would want to do something fun their group was doing.  By giving them the choice and not making a big deal out of it, they felt in control.
The servers will bring you frozen margaritas, etc., but also bring the kids frozen strawberry slushies or virgin pina coladas.  Great way to beat the afternoon heat on the beach. :)
Bring a paperback you can read and leave there -- the game room has an informal "library".
The gym is pretty lame, but we played some tennis, went running off the resort on a nice paved running trail, and swam laps in the pool before it became full of pool toys in the afternoon.
Relax.  Drop kids off at camp, sit on beach chair, when the server comes over to your beach chair and asks if you want a drink, say yes.  Repeat.[/quote]
