The whole concept may be a little off, as BBQ in the US is primarily a Southern tradition. It's actually many different traditions in many parts of the South, but really not so much a Northern thing. Unless you're talking Chicago ribs, but those are basically Southern ribs that moved North with the great migration. Might be better to match Southern 'cue against New England seafood.
