(I buy a bunch of boneless/skinless ones on sale, boil them, & freeze individually to defrost in the micro and shred as needed.) Meanwhile, microwave one of those frozen bags of rice. When the veggies & chicken are heated through, combine with the rice and a handful of shredded cheese (I use the mexican four-cheese blend). The cheese gets all melty and good. 4) Put whatever cut of beef you like in a crockpot and add a jar of peperoncini (drained), with a little water to cover the bottom of the pan. I let it cook all day & then serve it over rice.[/quote]
