It was quite the process. :) Cut the greens down, leaving about 2" and the root, boil the ever loving crap out of it until fork tender. Drain water, replace with cold water. When cool, it's easy to peel with your hands, the skin just rubs off. I used my immersion blender to puree. When pureed, it reminded me of that gelatinous cranberry sauce, not the smooth kind in the can, but the lumpy kind. [/quote]
