I think the beets add a bit of moisture, which is nice when there's no frosting. I think the addition of the cocoa messed with the moisture level because it doesn't seem to be as moist as it could be. I have some strawberries macerating with some vanilla right now. I will have another slice with some berry topping. I also have a chocolate zucchini bread that I make that is amazing. I peel the zucchini and shred it. There is no texture from the skin and it's super moist. [/quote]
