Make a dressing at home- Maple Balsamic- and then massage kale (stems removed and leaf torn) for a few minutes with the dressing. I use old sourdough or whatever bread is lying around to make fresh croutons. Chop the bread into cubes, add to the grease from the pancetta (See below) and then toss in seasonings. Add Pumpkin seeds or candied pecans from Trader joes, dried cranberries, honey goat cheese, pancetta, and apples. Im ready for relations after this salad. Its so delicious. The only ever salad that has ever compared is one in Denver Co and thats because they had pecan crusted goat cheese medallions fried on the salad. [/quote]
