OP here: Thanks, all, for the very helpful responses. Here's the recipe: 4 cups flour 1 1/4 tsp salt 1 pound (4 sticks) unsalted butter, softened (I know, it's a lot...) 10 oz cream cheese, room temp 1 1/4 cups sugar 2 tbs + 1/2 tsp vanilla 2 1/2 cups walnut halves (1 1/2 cups toasted and chopped, 1 cup finely chopped) 1. Line two baking sheets with parchment paper, set aside. Whisk flour and salt in a large bowl and set aside. 2. Put butter and cream cheese in bowl and mix on medium speed until fluffy (about 2 min). Mix in sugar and vanilla. Reduce speed to low and add flour mixture; mix just until combined. Mix in toasted walnuts. 3. Transfer dough to clean work surface. Divide in half, and shape each piece into an 8 1/2" inch long log. Wrap each in parchment paper, freeze until firm (about 30 minutes). 4. Preheat oven to 350. Remove log from freezer and roll in 1/2 cup chopped walnuts, coating the outside completely. Cut long into 1/4" thick rounds. Transfer to parchment lined sheets. 5. Bake, rotating halfway through, until golden around the edges, about 18-20 minutes. Enjoy! These are yummy cookies -- they're not super sweet, so they go really well with coffee and make a nice addition to a Thanksgiving dessert buffet.
