You can hike in the Dry Forest and go to beaches. That is pretty much all that is in Guanica proper. You might be able to find some dive/snorkeling excursions. If you are staying in Guanica, I assume you will have a rental car. PR is super easy to explore by car, so I would encourage you to visit some other areas close-ish to Guanica like Ponce, Cabo Rojo and even Rincon. Every city/town has a different vibe. From Guanica, you can go to La Parguera easily which has some snorkeling/scuba excursions. They have one of PR's 3 bioluminescent bays which are great for any age. I ALWAYS recommend the bioluminescent bays to people.
Was going to suggest all of this. We stayed at Copamarina last year in Guanica and did day trips to the bioluminescent bay and to some other beaches in the southwest part of the island. There was also a coffee plantation on my radar in the middle of the island, but we didn't make it there.
