Cabo is not super exhibiting unless you are gojng to really lean into the marine life tours like go to Cabo pulmo and isla spiritu.  There are some nice cruises or trips — check Cabo expeditions or Lindbad.

Galapagos is another idea for spring break but you said no South America.

I might also think about something like northern Spain and hiking part of the Camino Santiago, or seeing some of the small medieval towns in central Spain.

Another idea is Mexico City and some of the awesome colonial towns in central Mexico — cuiernavaca, Puebla, etc.  again, weather will be nice, food will be great and some awesome historical/cultural things to see.  You could also see the Aztec pyramids and the archeological museum in Mexico City.
