I would worry more about chicken outside on a warm day than I would a cheese tray. The only way shrimp would work for me is if you have it on ice. I think hummus with veggies and crispy pita chips is great. Guacamole and chips, too. Any chance of finger sandwiches? Pimento cheese spread on crustless bread.
