I'm pre-diabetic and looking for high protein, vegetarian recipes. Unfortunately, DC is highly allergic to nuts and several seeds. Can you please share you favorite high protein, vegetarian recipes that contain no nuts? TIA!
Do you eat any eggs, dairy or fish? Otherwise look for soy and tempeh recipes. I developed PCOS as a vegetarian and glucose was headed toward prediabetes. One of my kids had multiple food allergies (eggs, dairy, soy, nuts, fish) so we had to switch back to an omni diet centered on animal products. It turned out to be really beneficial to my own health, even healthy carbs were just too much starch for my metabolism. Starches are just chains of sugar and even whole, high fiber sources were too much for me. Just something to consider. My thinning hair even fully regrew, and lax joint issues resolved. I had been a vegetarian for many years and ate a lot of whole unprocessed food but it just was not a good fit for my metabolism into my 30s. Even with a lot of running. See if your doctor will prescribe a CGM, or there will be an OTC one this summer. Even 2 weeks of wearing it is invaluable data re: how your individual body reacts to particular foods. I'd also suggest checking out the Glucose Goddess, either IG or her book. For some people, her hacks help a lot. A lot of medications impact glucose and insulin, common ones that do include bcp, blood pressure meds, allergy meds including Flonase, mood and anxiety meds, statins and steroids. Google any you take and talk to doctor about alternatives. Sleep and stress also really impact metabolic health, if you have symptoms of apnea, get it treated. Good luck!
