the business owners obviously don't feel the vegetarian market is worth catering to. end of story. not sure how sizable the market for veg entrees really is, and it's hard to base it on the personal anecdotes of vegetarians. the thing that gets my gall is when vegetarians expect places like steakhouses to cater to them. you can always eat elsewhere, guys.
I've been a vegetarian for most of my life, and while I would never expect a steakhouse to "cater" to me, many steakhouses tend to have chicken or fish entrees. It does not seem like a huge stretch to have something that contains no meat, since you have already broken with the rule that says steakhouses must serve only steak. For what it's worth, at such places, I am perfectly fine eating a combination of side dishes. In my experience, steakhouses have some of the best potato sides around. If the OP is talking about Pulpo, though, I get it. There are plenty of Spanish things that don't have meat in them.
