I would add a salad to each of your meals. Alternative to 2x mashed potatoes would be a scalloped potato one day. Or a “hot potato salad” - really it’s like a cheesy potato casserole. You could do a roast chicken on the 4th day if you want something different and a different protein. Make dressing with it and you’ve got your carb. Add a salad and perhaps a roasted cauliflower with some sauce or seasoning and you’re good. But all good if you want to pick up pizza too, that’s a lot of entertaining you’re doing and effort you’re putting forth. If you get pizza just add a Caesar salad and that’s your meal.
Quoting myself to say, I missed that you already had chicken when I suggested a roasted one. My bad! If you prefer to go the cutlet route, I’d offer some kind of sauce/preparation for them (eg tomato sauce & mozzarella cheese to make chicken parmesan, mushroom gravy if you’re going the more traditional “schnitzel” route.)
Picking up a roast chicken sounds really appealing. I thought about doing this instead of the cutlets, but they don’t like moist chicken. Do you think I could put some kind of sweet bbq sauce on store bought rotisserie chicken and broil it whole? Also thought of pot pie or cottage pie instead of doing roast or pork. Seems easier to serve.
