If you touch something other than the food -- like the cash register for instance -- you now have germs on the gloves which you can spread to the food. The chances of doing something like touching the cash register, or swiping a glove across your face or hair without thinking about it and then touching someone's food get pretty high if you are not frequently changing your gloves.
