Honestly?  I know you are just asking for food ideas, but as an experienced SAHP, I have to tell you that you will make yourself crazy opening up the snack bar every hour for a hungry, growth-spurting kid.      who just eats a few bites.

I'd suggest having scheduled snacks if needed, once or twice a day, and teaching her to keep her appetite for the next snack or meal.  Every so often you can declare "Summer Rules"  apply and allow open snack bar (for example at the pool on Sundays) and then it will be a special treat, not something expected.

Anyhow -- you say she likes fruit, so that's an obvious one.    Homemade popsicles can be fun and time consuming and you can go all out and make them from a recipe with pureed fruit, etc.
Skewering some chunks of cheese mixed with grapes or grape tomatoes on fancy toothpicks is always fun.   You can teach her to use a plastic knife and saw in a back and forth motion to slice blocks of cheese into small cubes and she can do the skewering herself.

I wouldn't have any problems with kids eating ranch dressing if they are eating green veggies,  but you could perhaps mix it with some yogurt to make you feel better about it?
