Drain and toss with the spinach, which I roughly tear, so that the spinach wilts. Once it cools, throw in the tomatoes, artichokes, cuke/zuc, red pepper if using, parsley, and cheese. Add dressing and toss and serve either room temp or cold. I often make a double batch of the dressing to add back in right before serving. Not the healthiest choice but it is delicious.
