Keep them as close to possible to normal sleep times and eating times and it shouldn’t be awful.
I tried this and it didn't work for me. My husband and I would be in a hotel room, hiding in the bathroom, hoping the kids would fall asleep at their normal bed time hour when they were not tired enough and amped up and it was miserable for everyone. Learning to go with the flow, and stay up later, maybe sleep in later, was easier than trying to stick to same schedule as home when we weren't at home. Travel became more enjoyable that way.
