I am having a very hard time with menu planning and getting home cooked meals on the table. Before baby, I would love to try new recipes and only cooked those that were "restaurant quality." Now, I'm lucky to throw pasta with some sauce together. Last night I had an ephiphany, weeknight "themes." I am going to try to have the same type of meal on the same day of the week. For example, Monday: Italian/Pasta night (ideas: lasagna, roasted or grilled veggies with pasta, spinach manicotti, etc) Tuesday: Tex-Mex night (Ideas: healthy tacos, quesadillas, black bean casserole/tamale pie, etc) Wednesday: free day (leftovers or eat out) Thursday: soup/chili night (crockpot chicken tortilla soup, butternut squash chili, minestrone soup, etc) Friday: free day (leftovers or eat out) Saturday: Homemade pizza night Sunday: Asian night (Ideas: Chana Masala, Green curry, Stir-fry, etc) Has anyone tried to do something like this? Has it worked? I feel like it will make menu planning soooo much easier, and grocery shopping too. I welcome any other ideas to get a healthy homemade dinner on the table!
