You could also do a beef tenderloin with Wellington cups and green beans on the side. I did this for Christmas for my parents and they are still talking about it. Tenderloin was from Americas Test Kitchen and Wellington cups from Marthastewart.com. It's also all fairly easy to pull together but tastes restaurant quality. This is such a nice thing you're doing.
