https://therealfooddietitians.com/veggie-loaded-turkey-chili/ https://therealfooddietitians.com/healthy-hamburger-soup/ No link bc it is from Marley Spoon but 20-30 min Beef with Broccoli 1. In a medium saucepan, combine 10 oz jasmine rice, 2cups water, and 1 teaspoon salt. Bringto a boil. Cover and cook over low until rice is tender and liquid is absorbed, about 17 minutes. Keep covered until ready to serve. 2. Peel and finely chop 1oz ginger. Finely chop 2 large garlic cloves. Trim scallions, then thinly slice on an angle. Trim stem ends from 1lb broccoli, then cut crowns into 1-inch florets, if necessary. We increase to 1.5lbs of broccoli for leftover purposes. 3. In a measuring cup, stir to combine 4oz tamari and 1/2oz sesame oil, 1¼ cups water, and 2 tablespoons sugar. Set sauce aside until step 6. 4. Heat 1½ tablespoons neutral oil in a large skillet over medium-high. Add broccoli and ¼ cup water; cover and cook until broccoli is crisp-tender and water is evaporated, about 3 minutes. Transfer to a plate; wipe out skillet. 5. To same skillet, add chopped ginger and garlic, 2 tablespoons neutral oil, and half of the scallions. Cook over medium-high heat, stirring, until fragrant, about 3 seconds. Add 20oz ground beef (we increase to 2lbs for leftover purposes and there is still plenty of sauce IMO) and 1 teaspoon each of salt and pepper; cook, breaking up meat into large pieces, untilbrowned, 5–8 minutes. Stir in 2 tablespoons flour, then return broccoli to skillet. 6. Stir sauce, then add to skillet and cook, scraping up any browned bits stuck to bottom of skillet, until sauce is thickened, 2–3 minutes. Fluff rice with a fork. Serve rice topped with beef and broccoli stirfry. Garnish with sesame seeds and remaining scallions. Enjoy!
The Healthy Hamburger soup looks far more appealing than the name made it sound. Thanks for posting!
