Since the plot of the episode cast Shiv, Kendall, and Roman as children begging for their father's protection, and since a major theme of the episode (and an actual topic of discussion) was motherhood and birth, putting Shiv in white makes thematic sense. That it was not a great fashion choice for the character may have been seen as secondary.
