Usually something similar to what my kid is eating. Whole wheat quesadillas. Kid gets just cheese and some mild quac. On mine, I put all kinds of stuff like green peppers, black olives, chicken from the night before. Takes like 5 minutes. Whole wheat bread grilled herb and tomato sandwiches. An "adult" version of grilled cheese. Brushed with olive oil instead of butter, a selection of whatever cheese strikes me, thinly sliced tomatoes, salt/pepper/thyme is a favorite. Oregano. Fresh cilantro. Whatever I have in the house. Homemade soups (curried cauliflower is my favorite right now), with a piece of french bread. Whole wheat pita pizzas. Cheese and tomato sauce for my son. Herbed olive oil and lots of garlic for my "white pizza." I use fresh mozzarella and fresh spinach. But you can put whatever you want on it. I also like a version of Coronation Chicken Salad that a little restaurant in Annapolis used to serve. Chicken salad made with mayo, curry, diced apples, celery, and whatever else you may want to add like raisins, craisins, etc. I use leftover roasted chicken for that. I usually get a salad from a grocery store salad bar as well, if I've been out running errands that morning. If not, I add a fruit. And sometimes I'm not super-hungry so I just make a fruit smoothie from frozen blueberries, wheat germ, greek yogurt, and half a banana.
