We also have a split king, and need two regular pillow cases and two king pillow cases. I also prefer patterned sheets, or at least slightly fun sheets with a nice piece of trim or a bold color or something. As I looked at all the options you named, reviews were so mixed. And it added up so fast doing a split king set. Colors would be available in one piece but not another.

I ended up picking up two sets of these Opalhouse Percale from Target, of all places. They are DEFINITELY not overly soft, very plain cotton, but they are breaking in really nicely after a couple washes. I picked up a second set and they are now my favorite sheets, after the guest bed.

I think you have to figure out what feel/features are important to you and go from there. People rave about all kinds of things, but it comes to personal preference.
