My go to for the crockpot is kind alike pot roast but with chicken. Cut up veggies (carrots, potatoes, onions, celery) and put it on the bottom of the crock pot. Add chicken broth (I always use low sodium canned stuff) and maybe 1/4 c italian salad dressing then put the chicken on top. Add whatever spices you want (careful with the salt as the broth always has salt) and put it on low for 6-8 hrs. You can even put frozen breasts in there in the AM and it will turn out just fine. I assume you won't use too much of any one thing since it's just the two of you. Another one I like is pork chops or a small pork tenderloin. I put in drained sauerkraut & applesauce on the bottom, pork on top, season how you like. Again, low for 6-8 hrs. Handy things to have around for crock pot cooking are cream of chicken/cream of mushroom soup. If all else fails you can put a protein in there with some seasoning and a can of this stuff + a bit of water and let it go. Also, keep some non-stick cooking spray on hand. If you use a creamy soup or have a recipe that has any kind of cheese, it can be a pain in the butt to clean. Or get those disposable crockpot liners and cleanup is a cinch. If you want some rice, there's always instant stuff you can put in the microwave of your hotel room.
