In fact the opposite is usually the issue with frozen cake and bread...too much moisture (the moisture in the cupcake freezes...when defrosted too quickly, they can get too wet! That's why you want a slow defrost in the fridge first, then air drying before frosting)[/quote] ......and FWIW I find that the flavor and texture of sweet breads such as banana, date nut and zucchini taste even better and moister after being frozen first.
