Where are you staying in Kauai?  It makes a difference for recommendations.
But definitely take a boat ride around the Na'apali coast (and bring dramamine).  Kauai is a great place to take a helicopter ride, if you want to splurge -- you can get a better view of the canyon and there's lots of cool waterfalls.
If you don't do the helicopter ride, definitely go to Waimea Canyon (especially if you haven't been to the Grand Canyon).

Some other possibilities for Kauai include:  Botanical Gardens; Coffee Plantation Tour; horseback and/or kayaking in the rivers with waterfalls on the east side of the island.

There's also a strip mall in Poipu where locals do traditional dancing, for free, a couple times a week.  It's a fun place to go and get ice cream and see the show.  [/quote]
