We are trying to conceive and are stocking up on our reading materials.
Any pregnancy/parenting books you loved?

I would skip the pregnancy books. Read about baby sleep instead! I read several:
Happiest baby on the block
healthy sleep habits, happy child
Baby wise

Any specific reason why to skip pregnancy books?

I am already confused about conflicting lists about what not to eat!

Expecting Better - gives you the data and evidence on a variety of concerns and issues that come up during pregnancy including chances of miscarriage, safety of medication for morning sickness, and which foods you actually need to avoid. This book is known for saying it's safe to drink alcohol in moderation during pregnancy, though for what it's worth I actually read it and decided not to drink at all because I have such a low tolerance for alcohol in general.

What to Expect When You're Expecting - I know, not a particularly original recommendation, but I've found it to be extremely comprehensive and very handy to have around.

The only books I would recommend out of the dozens I read were:

Pregnancy: Expecting Better
Newborn: Happiest Baby on the Block (though buy the video and watch it with DH, it's better for demoing the techniques)
Baby: Ferber or whatever other sleep method is your preference
Toddler: Oh Crap Potty Training

I don't see a reason to not eat anything. Ymmv. Anytime I had an issue during pregnancy, googling helped me far better than any of my books (I own them all). For instance I had terrible plantar fasciitis and the books just gloss over that. I'm already an extremely healthy person and the pregnancy books just didn't do anything for me. I focused on labor, delivery and avoiding a csection, but found online resources to be better.

Depending on how quickly you fall pregnant and how much you'd like it to happen immediately, you should check out It Starts with the Egg. Invaluable information about improving egg quality to increase your chances of getting pregnant.

I also suggest The Birth Partner for the birth experience - invaluable to me as the spouse when DW was in labor and when we drew up our birth plan.

Thank you for appreciating a joke when you see one. Not lesbian, but a DW that had difficulty. The “come on, let’s g, my temp is a perfect 98.6578543!” Did not ramp me up. You’ve got to relax if these things are going to happen. Good luck!

I didn't find any of the pregnancy books helpful, either. Just listen to your OB/GYN and use common sense.
