Still no one has answered who makes these decisions? Other than the AD. I’m curious if it’s a larger group or just a few people.

The one school I know about has the AD, one other person from the Admissions team, board member, athletic director.

I think it depends on the school but in general it is not more than a handful of people involved in the actual decision process.

The PP who claims the process is over knows as much as I do. I maintain the process is ongoing. How do you decide which one of us to believe when we’re both random anonymous insistent yet ill informed DCUMers

If a school mails on March 2nd, you back up a day for packaging, then another day for printing letters and materials. Then back up several days (probably actually 1-2 weeks at most schools) for financial aid decisions. So yes, admissions decisions are made at most schools, unless it is a school that is not need-blind and is adjusting admissions offers based on aid decisions. That's not to say there may not be outliers here or there where a decision gets made later, but by and large, any school planning to notify/mail in a week has decided who to admit already.

The school we applied to had play dates until at least Feb 15. Short turnaround time between then and March 2!

It depends on the school. At some schools, the admission committee reaches a decision, sometimes by consensus, sometimes by actual vote. Committee discussions are often freewheeling — a discussion of one applicant may take a very long time while others sail through in two minutes — because the process is holistic. While a committee decision can be overruled by the admission director or the head of school, it is an unusual occurrence — perhaps two or three candidates per cycle.

At other schools, it's clear that the admission committee deliberations are merely recommendations to the admission director, and by implication, the head of school.

Though there may be other ways of structuring the decisions, those two would account for nearly all schools' processes. At every school, the head of school has ultimate responsibility, but how wide a role the heads play is determined by the heads themselves.

In my experience, the first scenario is more common than the second.

Why does it matter anyway? Even if you were both all-knowing, we'll all find out when they inform us

I don't! Could be rough to hear. If you've ever been on a hiring committee at a private school or in a university, the shorthand used to refer to and evaluate and group candidates, while not intentionally insensitive, can sound that way.
