I posted earlier. I'm still in the anti-washing camp -- I think water makes mushrooms mushy.
I only dust off visible dirt. Typically takes about as long to clean a pint of mushrooms as it takes to heat the pan I'm going to cook them in. |
I peel them, look for the skin on the inside of the mushroom, lift the skin and peel.

if they are already cut up like shiitake mushrooms and pre-packaged, I don't usually wash if they are going to be cooked. Otherwise, I rinse under the faucet and rub a little with my fingers to get the dirt off. I pat dry with a paper towel. |
