I have to make dinner for a few friends. One is a picky eater. She doesn't eat rice, pasta, quinoa, red meat or any kind of sauce!!!
I was thinking about a salad but she can't stand avocados, corn and dressing. What can I make that's easy. FYI I am a poor cook. |

This is not a joke. I eat everything so it's hard for me too to fully understand it. She's a nice girl so I have to make something that she will enjoy too. |

Tell her what you are making, that you are not a great cook, see what she says....I mean its not like this has not happen before with her. |

Ham & Spinach quiche (so easy to make with store bought crust), a make-your-own salad bar, baguette and cheese for the rest of the normal eaters.

I have become a master of feeding picky eaters because of a picky son and other weird eating needs in my family. How about something like chicken kebobs? Chunks of chicken done simply on the grill, plus grilled veggies. You can make a dipping sauce for those who like it. Add nice fresh bread. She can eat what she likes, leave what she doesn't, and it doesn't have to be a big deal. I've found that for picky eaters, the one pot meal (stew, soup, tart, risotto) is the kiss of death - they can't eat any of it, so they can't even look polite by, say, eating lots of chicken and saying how wonderful it is. |

I second what the others posters have said -- chicken and 1-2 vegetable sides and bread. On behalf of those who are picky, I'd say the main thing is to cook everything simply -- avoid mixing stuff together and avoid sauces. I feel like adult picky eaters generally eat most major foods -- grilled or baked chicken, veggies, bread etc. -- but they tend to avoid many sauces or broths because they may not like sweet, salty, sour, whatever. As for picky eaters having mental problems -- probably some truth to that as I find all of the picky eaters I know (incl me) to be a bit Type A or control freak types of personalities and food is something that we can control. |
