What are you packing for dinners at the pool?

Just had sandwiches, blueberries and applesauce at the pool today with a 6yo and a 2 yo. No one cares what they're eating because they are too focused on getting back to playing. Why worry about variety. Embrace the easy!

Some of our usual fare includes hot dogs, burgers, grilled chicken. Friday is pizza night.

Last night: Beans and rice

Tonight: Tortellini w/ fresh basil and EVOO, Red Pepper & Garlic Chicken Sausages

We'll be skipping the pool over the next few days, but I'll be checking back for ideas!

Pressed sandwhiches, wrapped in foil. We usually get all the fixin's from Costco: torta bread, pre-sliced mozzarella, jar of roasted red peppers, pesto spread, and then balsamic vinegar and pepper. Tonight we had run out of red peppers so I subbed in with prosciutto - tasty! You might also try doing a chicken salad, try wraps, or cold noodles (thinking sesame chili oil flavor more so than italian).

We often pack a one dish meal like cold pasta salad with ingredients like pasta, of course, chopped grilled chicken, cherry tomatoes, broccoli, all tossed in Italian salad dressing. However, I prefer foods at the pool that don't require utensils, so I will be checking this thread for more ideas. I guess I could pop the chicken, tomato and broccoli onto skewers ...

Bring some empty taco or tostada shells. Pack on some fixings to put in them...tomatoes, lettuce, shredded cheese, some sauce in a container, etc. Your kids will have fun putting them together and if a stray kid comes by who looks hungry...you might share..

Pasta dressed w/ olive oil, basil, and parm. Pasta salad.
Tomato, basil, and mozz. salad with bread that I warm up and wrap in foil.
TBM sandwiches.
BLTs deconstructed and then reconstructed at the pool.

Second the skewers idea! So many options: caprese skewers with cherry tomatoes and marinated balls of mozzarella, skewers with grilled chicken and grilled vegetables (good cold), fruit skewers... that would be so easy to eat and clean up.

Our pool has 4 or 5 Weber gas grills; lot of times we take pre-made burgers and pop them on the grill. also, if you cook hot dogs at home put them in the but then wrap in foil, then wrap them in a towel they will hold temp for about 2 hours.

This is OP, last night we had:

Strawberries
Cheddar cheese
Sliced baguette
Tabbouleh salad

It was enough food and light enough for a hot evening.

We also have gas grills at our pool. We often bring burgers (beef, salmon, veggie, or chicken) or sausages or marinated meats. Cook them up at the pool. Also bring big veggie strips soaked in balsamic vinegar and salt for the grill.

For marinated meats, we find it works to bring home big packs of meat from costco (like the organic chix thighs) and open up the packs and mix with marinade in zip locks and then freeze them that way.

Other ideas: beans, quinoa salad, hummus, chips and dip, and pasta salad.

Also, fruit and home-made popsicles (we put them in the freezer when we arrive)

Just had turkey burgers and steam fresh veggies. Do you have microwaves? I need more ideas too though.
