
For some unknown reason, my mother-in-law decided to give us a case of mangoes. I have no idea what I am going to do with all of them, but I know I need to do something, and quickly as I saw some fruit flies near them.
I was thinking about maybe doing some sort of preserves or jam, and make Christmas gifts from it. Anyone have any recipes they want to share? |
I have no idea how to make preserves but mangos are great grilled. Just slice and grill. Even better with grilled chicken or scallop dishes. Mango salsa is very good, that maight be a good jar gift. TRy Williams Sonoma recipes and search for mango. |

I think you can slice them up and freeze them also. Trader Joes sells frozen mangoes, they are yummy in yogurt, smoothies and fruit salad. |
I would cut up and freeze them, even though it's a lot of work. I buy the frozen mangoes from Trader Joes and put them in the blender with a little cream and sugar to make a soft mango ice cream, and they are scrumptious. |

Thanks for the tips. I think I should have added, that I do have some issues with food allergies, and am often allergic to non-cooked fruits. It started with apples, and has just slowly been progressing. I was devistated when I discovered I couldn't have cantalope anymore, as it had been on the safe list for years. It has been so long since I had fruit of the non-banana, non-berry variety, that I am afraid I am now allergic to raw mangoes.

Well, I wanted to update, and say that I made the Jam. I added cranberries, and it is YUMMY! |

Odd, I have the same sort of allergy except it seems to be confined to tree fruits, such as apples. Mangos are pretty versatile, and often I see recipes for mango salsa, mango chicken, etc. There are also some Indian dishes that use mangos. Perhaps you could try going to epicurious or allrecipes, plug in mango as a key ingredient, and see what comes up. How severe is the allergy? Mine starts out pretty mild, and the more I am exposed to something the worst it gets. If yours is not that severe, try a little sliver of uncooked mango. If you can eat it raw, you could do smoothies, put it cereal, freeze it, etc. It's a little unorthodox, but that's usually how I test fruits. If my mouth starts to feel weird or my ears get itchy... I know I'm allergic to it. |
