Pot/oven roast question

I want to make an oven roast using one of those plastic bags - should I brown the meat in the pot first or even if I use the bag it will have a nice brown/golden color?

I always brown my roasts first and, while I have never used a roasting bag, I think you will need to do so in this case as well if you want that nice color.

I usually make pot roast in my slow cooker, 8+ hours on low. My slow cooker has died & i want to make a roast in the oven. is there a way to get the same falling apart texture in the oven?

Yes, you can. Here's a good basic, slow-cooking recipe for either the stovetop or oven. I also like the Italian Pot Roast recipe from the same site.
