Help me with a meal plan when switching from days to nights

Hey. I have been doing fairly well with my diet recently, but have to switch to nights this Wednesday, Thursday, Friday, then back to days by Saturday evening (sitter has to go to her other job). I pretty much cut out sugar and flour and stopped eating between meals.

Typically, I eat:
6am-oatmeal, fruit, nuts & coffee with cream
12pm - salad or homemade soup and some kind of protein (usually canned fish)
6pm - protein (eggs, meat), starch (potatoes, sweet potatoes, rice, etc), veggie (salad, broccoli, green beans...)

Usually when I switch to nights, I eat the above during the day, and sleep for a bit after dinner. Then I get up around 10:30pm, eat another breakfast, work from 11pm-8am, have a snack at work, then eat another large meal when I get home from work because I feel starving. Then I sleep for a few hours, lave “lunch” with my kids who are doing school from home, fix dinner again at 6pm, and repeat. So on work days, instead of three meals, I eat 4 meals and a snack plus I do a crappy job of sticking to no flour/no bread. This is my typical night shift diet:

3am - nuts, pretzels, coffee
9am- eggs with cheese, toast, fruit
12pm - salad with protein, half a sandwich
6pm - meat, starch, veggie
10:30pm - oatmeal, banana, nuts, coffee with cream


Any thoughts on a good routine to keep me at three meals even when my sleep/wake cycle is all screwed up?

My sitter has her own thing going on during the day and comes in the evenings to put kids to bed and stays overnight. DH works 4pm-7am those days. He is willing to help.
