Why doesn’t mayonnaise have protein?

It’s made from eggs and oil. Shouldn’t it contain both protein and fat instead of just fat?

It does. But it’s overwhelmingly made of oil. An egg has about 6 grams of protein. In order to eat that much protein when eating mayonnaise, you’d have to have 45 teaspoons of it. That’s over 4200 calories of mayonnaise. Of that 4200 calories, 98% come from fat.

It is only the yolk that is used. Egg protein is in the whites.

We sub plain Greek yogurt in for mayo in pretty much every recipe. It works great

Do the popular versions even have egg anymore? You can leave mayo sitting out forever now because it's mostly oil.

LVOE mayo. Could eat it by the spoonful. But I don't.

Yes it does have egg yolk still, and oil. It is pretty stable because of the high amounts of vinegar. That is, until it gets mixed with other foods, that is when it is at risk for spoiling. I think onions are the main culprit for spoiling it.
