It does. But it’s overwhelmingly made of oil. An egg has about 6 grams of protein. In order to eat that much protein when eating mayonnaise, you’d have to have 45 teaspoons of it. That’s over 4200 calories of mayonnaise. Of that 4200 calories, 98% come from fat. |
It is only the yolk that is used. Egg protein is in the whites. |

Yes it does have egg yolk still, and oil. It is pretty stable because of the high amounts of vinegar. That is, until it gets mixed with other foods, that is when it is at risk for spoiling. I think onions are the main culprit for spoiling it. |
