inexpensive desserts, pies, or make-ahead meals?

Inexpensive pies or other make-ahead meals? What is a pie, dessert or breakfast casserole that I can make a TON of (say a dozen for friends, plus more for my family, and won't break the bank?

Baking in bulk... just something nice I want to do for each of my friends some upcoming weekend.

Baked taquitos or enchiladas. For dessert, bars like brownies or blondies would be easy.

Cheese and spinach quiches can be inexpensive. You can make crust or look up the "crustless" bisquick recipe.

Make cookie dough, portion it and freeze. Pull out however you want to make.

This is an amazing chocolate chip cookie recipe. And a link to how to freeze cookie dough. I highly recommend getting an OXO medium scoop.

Get the small aluminum loaf pans and make cakes with drizzled icing. Does’t have to be pound cake - just find a recipe with sour cream in it. Or make a bunch of apple cinnamon or banana or cranberry orange mini loaves for breakfasts.

Quiche. They freeze very nicely. You can do a variety from Lorraine, broccoli, smoked salmon, etc. there is a great French onion soup quiche recipe too.

Breakfast dumplings or blintzes with ricotta/mascarpone. Also freeze well.
