We invited some friends over for dinner on Sunday and just realized that they have several allergies! I'm usually pretty good about figuring out what to cook when people are coming over but this time I'm totally drawing a blank. Do any of you have ideas about dishes I can cook for people that are allergic to all milk products, wheat, onions, read meat and beans. I'm thinking about some sort of chicken dish and I guess some rice but don't know what to make (everything I can think of contains a milk product (milk, butter or cheese!).
Since time is of the essence, please post complete recipes (with all ingredients listed as well as the coking time/temp.). Thanks a bunch. |
| Grilled chicken, sauted mushrooms in olive oil, roasted vegetables, risotto with seafood, fresh fruit for dessert, boiled potatoes with dill. Wash your pans well before cooking - wheat is sticky! |

Grilled tofu, chicken or fish as well as veggies (just not onions). Plus a big fresh salad.

| What about a Thai chicken curry? Take a can of curry paste, fry a tablespoon or two (depending on how hot you like your food) in oil, add a can or two of coconut milk, boil for a few minutes, then add large pieces of chicken breast and cook for about 15 mins. You can also add fish sauce and Kaffir lime leaves if you can find them, or just a bit of soy sauce. Add some chopped veg towards the end of cooking so that they retain a bit of bite but are not too hard (I usually add green peppers if making a green curry, and red peppers and pineapple if making a red curry). Serve with jasmine rice. You could finish the meal with some tropical fruit with ice cream on the side. |
| Soy sauce has wheat usually. Check any labels for wheat, such as broth, soup or sauces. You can buy tamari sauce that is wheat free. |

(I know this is beside the point, but, I think your dinner guests are totally lying to you about their "allergies." And making your life harder therefore.
They're probably merely lactose intolerant; eschew red meat; don't like the taste of onions; and may possibly -- possibly -- have celiac disease (but more likely are just living the gluten-free lifestyle because they perceive that makes them feel better and she heard about it from Elizabeth Hasselback on The View.) The legumes may be a legit allergy, producing the risk of anaphylactic shock. Of course I could be totally wrong, but adult allergy liars make the road more difficult for those of us with actual, life-threatening food allergies, because these people fatigue waiters, hotel staff, room parents and hosts with their nonsense preferences.) |
