Plant only eaters — how do you do it?

Does breakfast typically look different from lunch/dinner?

My DS 18 year old is a vegetarian. He likes pasta dishes, tofu dishes, bean burgers, eggs, nut and nut butters, etc. It's his choice and we have 3 other meat eaters in the family. We rotate having something veggie that we all eat and sometimes make two meals or a similar meal --- like we grill burgers, some meat, some bean. etc.

I like this one https://minimalistbaker.com/rich-red-curry-roasted-vegetables/ but I also make green, yellow, Jamaican, massaman, and Indian curries. Breakfast is usually pancakes with chocolate chips or pecans, French toast, tofu scramble wrapped in a tortilla, fruit smoothie, oatmeal with cinnamon, brown sugar and strawberries, or hashbrowns with pico and diced avocado.

If you want to ease into it, try doing one vegan meal a week (e.g. a meatless Monday dinner)
