Paella. It's a one dish meal that works well with variations. The base or foundation is always sofrito. Take a look online, OP. If it's something you think you'll have fun with, I'm happy to help here. I was inspired by my huge, stunning serving bowl and tray. From there, I bought an authentic paella pan, and quality saffron threads.
All the rest is a cake walk. It's authentically served in the pan it's cooked in (to applause and oooh ahhh's). I can help you make it work for kids too. Not only is it delicious, it's a very forgiving dish to make. Serve it mezze style (fancy word for family style). Presentation is everything. Oh, and ice cold sangria! So easy. Flavored fizzy water for kids with slices of fruit and with lots of ice. Dessert: Mexican wedding cookies. Bakery bought is fine if it's an excellent banker. Individual ice cream cups and lemon ice cups for kids. |

Taco bar is my favorite. All you have to do it cook the meat and add the seasoning. Cant really go wrong there. Chop up other stuff (onions, peppers, lettuce, etc) and set it out. Options of hard and soft shells. I don’t really know anyone that doesn’t like tacos. The vegetarians can make a salad. I don’t really cater to anyone... |
We do a good BLT bar. Have avocado, good deli turkey, sliced cheese, maybe apples or pear slices. Herbed mayos, or spicy ranch. Can serve with any type of potatoes or chips. |

Depends- invite me to a dinner party and I would be disappointed. Invite me to hang out and you will serve dinner or just offer to feed me because I’m there at dinner time, then perfectly ok. |
Pulled pork or chicken bbq in the crockpot. Serve on hamburgers buns. Baked beans and a green salad are easy sides |

Homemade paella can be spectacular and delicious, but it does not fall under the heading of ‘easy dinners’. A lot of people have a hard time making decent rice, let alone in combination with several types of seafood. But for those who are up to the challenge, more power to you! |
