Kosher for Passover food that is vegan?

So my sister's inlaws are coming for the seder, and they are vegan. What vegan main dish can I prepare that is also kosher for Passover? No kitniyot -- beans, corn, grains, soy are all out. And since they're vegan they don't eat eggs or other animal products. I was thinking a hearty salad with roasted broccoli, pecans, and bell pepper. Would welcome other suggestions, particularly for something portable and make ahead. I only have to make it for them. The other 25 people will eat the meat and poultry main dishes. Thanks!

I've never had this recipe, but I like sweet potato kugel. Here's a vegan/passover recipe for that.

That, and a nice salad would be a great start. Maybe include some nuts with the appetizers, and see if you can find some sorbet that's vegan/passover friendly, and you've got a meal.

I'm thinking you need quinoa and almonds/walnuts so that they have a protein, otherwise they'll be starving. Do you think there's something you could do that's sort of like meat-balls that includes quinoa? If not, I think you just make a stir-fry that almonds and is served over quinoa. Some people don't eat broccoli on pesach, might want to check.

Here's a meatball option that could work. It does have an egg wash, but that doesn't seem like it would ruin the integrity of the meatballs if you skipped it (might want to try it first?).

I'm vegetarian-- my fav pesach thing is ratatouille. I've made ths gefilte "fish" many times. Make sure the nuts are ground reaaallllyyyy fine! http://www.jvs.org.uk/vegan-gefilte-fish/

Chopped ‘Liver’ Spread

Adapted from No Cholesterol Passover Recipes by Debra Wasserman and Charles Stahler and provided by The Vegetarian Resource Group (VRG.org)
1/2 lb. mushrooms, chopped
1 small onion, chopped
3 Tbsp. oil
1 cup chopped walnuts
Salt and pepper, to taste
1 Tbsp. water

Sauté the mushrooms and onion in the oil for 8 minutes. Pour into blender or food processor, adding the walnuts, salt, pepper, and water. Blend until smooth. Serve on matzo as a spread.
Makes 1 cup


Also, stuffed zuchinni or eggplant is tasty and pretty

Some people will not eat quinoa during passover and most sorbet has corn syrup. It is very difficult to be vegan at Passover.

We love spinach matzoh kugel and it ma[url]kes a great filling for stuffed chicken. Since they won't eat chicken, you can also stuff bell peppers with this and roast it and it would be wonderful. Our recipe doesn't work for a vegan, but you can try this one, substituting Kosher for Passover vegetable broth for the chicken broth. There are several egg substitutes available.

Thanks for all the suggestions. I think we may go with the portabellos since that's easiest. With a million other people coming I don't have time to make anything too fancy.

I would be very surprised if it was kosher for Passover.
