Vegetarian recipe swap, anyone??

Loved the idea of the recipe swap poster - and the initial recipe offered - but since no other veggie options were listed, I thought I'd post here seeking a follow-up with vegetarian dinner ideas. Looking especially for quick and easy ideas - we end up rotating through so few options these days! Here are a couple of our standbys:
- fake "pigs" in blankets - wrap veggie hot dogs in pillsbury crescent rolls (either cut up hot dogs or whole depending on mood) and heat veggie baked beans in microwave - quick and cosy dinner in moments!
- mexican omelet - with salsa, refried beans, the mixed mexican cheeses
- "home-made" pizza - with store crusts, sauce, shredded cheese, and whatever toppings we've got around (frozen spinach, fake sausage or pepperoni, vegetables, etc.)

Hi. I'm actually the OP of the other recipe swap thread, but love this idea too. I'm actually a vegetarian as well but the only one in the family so I collect ideas for recipes with meat too. Anyway, building on the slow cooker idea in the other thread, here is one of my favorite veggie recipes:

Lentil and Red Pepper Soup

In a skillet with about 1 1/2 tbsp. olive oil, soften 1 chopped onion, 4-6 chopped garlic cloves, and 1-2 seeded and chopped red bell peppers. Put it in the slow cooker, along with 1 cup of dried brown lentils (picked over and rinsed), 5 cups of water, a few sliced carrots, 1 tbsp. of red wine vinegar, and salt, fresh pepper, and cinnamon to taste. Cover and cook on low for 7-9 hours. I serve this with a fresh baguette and an arugula/grape tomato/parmesan salad dressed with a good balsamic vinegar and olive oil.

Mmm ... that sounds great! Have been wanting to try slow-cooker recipes but never see vegetarian ones that sound good.

In the winter, we make spaghetti squash with tomato sauce. If you like fake meatballs, you can add them too.

My kids also love polenta. If yo've never made it, it's 1 part cornmeal to 4 parts water. Cook for about 5 minutes. We add sauteed spinach and cheese to the top. SOmetimes we top it with a poached egg, other times we add mushrooms or sausage (fake for me, real for the carnivores in my family)

Chickpea curry - I make this up depending on what's in the house. 1-2 cans of chickpeas, onions, garlic, 1 can crushed tomato, some carrot, bell pepper if you have it, potato (sweet or other). Cook the potato first, since it takes the longest (you can microwave to speed it up). Saute veggies together, then add the crushed tomato. You can also add coconut milk if you like it. Then add sweet curry powder and squeeze in some lime. Great over rice.
