| Cut cherry tomatoes in half, toss in olive oil and a little balsamic, sprinkle with Parmesan, roast in baking dish at 400 for 20 minutes. Remove from oven, add salt, pepper and fresh basil leaves. Spoon over angel hair pasta. Yummy. |

So many nice cold soups you could do: gazpacho, pea & mint soup. Serve with a big salad, bread and hummus. Greek salad (hold the feta) with gigante beans or cannellini. |

| Buy a tabbouleh mix ... Add fresh diced tomatoes, olive oil, and lemon juice. Serve over crisp romaine lettuce hearts. Makes a lovely and easy summer meal. |
| Greek potatoes ... Peel and cube potatoes, place in glass roasting pan with crushed garlic, olive oil, lemon juice, and oregano ... Stir well and oven roast until potatoes are done. Stir midway to keep lemon juice distributed over some potatoes will end up too sour. Serve warm with crumbled feta on the side for those that can eat dairy. This will make your home smell heavenly while cooking. |
Shredded Brussels sprout and sweet potato hash with maple syrup and a bit of chipotle chili powder. Amazing. Even better with bacon.
