Eggs in purgatory. Aka Shakshuka. Skip the parm cheese and sprinkle with nutritional yeast (or not) Serve with crusty bread and a green salad.

Cut cherry tomatoes in half, toss in olive oil and a little balsamic, sprinkle with Parmesan, roast in baking dish at 400 for 20 minutes. Remove from oven, add salt, pepper and fresh basil leaves. Spoon over angel hair pasta. Yummy.

pasta with toasted breadcrumbs is also excellent. And if you happen to have a non-vegan at the dinner table, he or she might enjoy a bit of anchovy butter to round out the flavor.

So many nice cold soups you could do: gazpacho, pea & mint soup. Serve with a big salad, bread and hummus.

Greek salad (hold the feta) with gigante beans or cannellini.

Bulgur salad with diced avocado, red bell pepper, sweet onion, and pineapple chunks ... Dress with olive oil and lemon juice. Very filling, healthy and tasty!

Buy a tabbouleh mix ... Add fresh diced tomatoes, olive oil, and lemon juice. Serve over crisp romaine lettuce hearts. Makes a lovely and easy summer meal.

Greek potatoes ... Peel and cube potatoes, place in glass roasting pan with crushed garlic, olive oil, lemon juice, and oregano ... Stir well and oven roast until potatoes are done. Stir midway to keep lemon juice distributed over some potatoes will end up too sour. Serve warm with crumbled feta on the side for those that can eat dairy. This will make your home smell heavenly while cooking.

Shredded Brussels sprout and sweet potato hash with maple syrup and a bit of chipotle chili powder. Amazing. Even better with bacon.
