Feeding a large group

Need some meal ideas for feeding a larger group (30 adults after Church). The only thing that is out of my list are tacos because they had tacos provided for them last week. Are there any suggestions? There is a microwave in the break room but it would create too much of a wait if everyone used it so I'm looking for something that wouldn't need to be warmed up. I don't mind doing an accompanying side dish or dessert as well.

pasta salad goes far this time of year. pretty easy to make ahead and refrigerate.
can you do that and a cheese or deli tray? then just have extra chips, sides etc. any fruit or veggie tray.

you can get rolls or bagels from the grocery store or panera. also, if there's a plug, bring and borrow a couple crock pots. put in frozen meatballs and sauce for more subs. again, get rolls.

How about quiche or spanish tortillas? Don't have to be hot and you can supplement with bagels or croissants and fruit or veg salads.

I would do potato salad instead of macaroni b/c you can eat it cold. Toss in a plate of brownies and/or cookies.

Quinoa salad(or farro, or orzo)

chopped cherry tomatoes
chopped avocado
chopped cilantro
chopped black olives
chopped fresh spinach
dried cranberries

drizzle with an orange honey vinaigrette to taste and you have a healthy salad.

I would be very happy with these options. I'd be extra happy if there was good dijon mustard. And/or biscuits.

Garlic chicken. We make HUGE pans of this when feeding volunteers.

2 boneless skinless chicken thighs per adult
1 container of roasted garlic cloves (from refrig case in grocery store) per 10 thighs
1 package of fresh poultry herbs per pan (I like to put 8-10 thighs in a pan)
1 quart of chicken stock per pan
salt & pepper to taste

put all ingredients in the pan. Bake at 400 until chicken is done. Remove poultry herbs.

Serve with rice, noodles, or potatoes (boiled or mashed), etc.

Goes well with a green salad or sugar snap peas & carrots.

Fried chicken is good cold as well as hot, if it's done right. Marinated in buttermilk and with the coating seasoned. Serve it with biscuits and a good cole slaw. (I like biscuits.)
