I found a carton of half-half milk in the refrigerator. I'm reasoning it is left over from Thanksgiving. The sell-by date isn't until Dec. 26 and it has NOT been opened yet. I would hate to throw out a perfectly good carton.
Neither DH nor I use it for coffee - is it good for anything else - like homemade whip cream, mousse, can I use in recipes in liue of milk or cream? We are out of town for Christmas so I definitely need to use it or toss it by the weekend. Any ideas appreciated. |
| I don't think you can whip it, but you can substitute it for cream in many custardy-recipes (quiche, strata, bread pudding, etc.) or use in mashed potatoes. |

You can also freeze it and use later. May not be the best consistency for coffee once defrosted, but perfectly fine to bake with (any cakes that call for milk can always be made richer).
Used in french toast, scrambled eggs, quiche etc as PP stated. Or make pudding or hot cocoa for the kids. Yum!! When all else fails - dont you have a neighbor you could give it to rather than throw away an unopened carton of food? |
| Mix it up with a package of alouette cheese spread, pour it over a couple layers of sliced potatoes (a bit of s&p on them) in a casserole and bake it. I think it's 350 for about 1/2 hour, but can't remember exactly. When it gets a bit crispy around the edges, it's good. |
| It is great for using in cream sauces. It won't separate like hvy cream can. |

Ice cream! (OK, not a solution if you don't have an ice cream maker, but perhaps a good excuse to get one... You can see where my priorities lie.)
We have a Cuisinart-made machine that's nothing like the rock-salt-and-crank models we all remember from summer camp. It's like a crock pot... that makes ice cream. What's not to love about that? Just dump the ingredients in the bowl and press the button. Twenty minutes later, you've got sweet, sweet frozen goodness that puts store-bought to shame. |

| I'm the odd duck, but my kids love it when I make frozen peas in butter and half & half sauce. A little salt, and they are shoveling it in. It works for us! It's pretty much why I buy it, that and mashed potatoes. |
