ISO corn recipe for Thanksgiving

Our DS is bringing his girlfriend home from college for Thanksgiving. We asked him to find out what she'd love to eat for dinner and she said corn -- but not cornbread or corn pudding as he suggested -- just corn. (I know this might sound picky, but she's really a sweetheart.) So, any other suggestions out there? TIA!

This recipe is absolutely fabulous with fresh Silver Queen corn! At this time of year, that's not possible; but if you can find frozen white corn niblets. it will still be delicious! The Fresh Market carries a great brand of frozen corn.

Stewed Corn

Ingredients
6 ears fresh Silver Queen corn
½ stick butter (not margarine)
½ cup whole milk
1 teaspoon salt

Directions
Shuck corn and remove all silks. Finely cut the corn. (With a sharp knife, vertically slice each row of kernels. Then cut off about ½ of the kernels, going round the cob. Repeat.) With back of knife, scrape juice from each cob. (It will splatter, so use a large bowl.) Place in double boiler. Add other ingredients. Cover and cook over gently boiling water for approximately 1 ½ hours. If needed, add more milk. Serves 4.

Plain old frozen kernels, pan-roasted in a dry iron skillet, can get pretty flavorful while keeping it simple.

If you want to fancy it up a little you can add some bacon and shallots, chopped up fine, and a bit of butter (or for real decadence, just a touch of cream).

If you wanted to add color you could add some fine-chopped red pepper, but now you're flirting with making some kind of warm corn salad, not just corn.

I should've mentioned -- thaw them first. The microwave will do for that.
(If you can find fresh corn on the cob at this time of year, by all means, cut it off with a knife and use that--it'll be so much the better. But in late November, why not make it easy on yourself and make it with something easy to find in the freezer case? It'll be perfectly fine, I promise.)

Super easy and no matter how much I make, we never have leftovers. My DH absolutely loves this. He has no idea how easy it is to throw together.

Yeah -- this is what I'm thinking too (OP here), though I hadn't thought of adding bacon -- love that idea,PP. And, yes, I had planned to toss in some red pepper, but will check with the GF first to see what she thinks. BTW, WF has frozen roasted corn kernels, which are pretty tasty.
